I know you are thinking Moon Pies are usually smothered in chocolate but my girls just kept saying moon pies… so that is what we are calling them Ha Ha. Stir together the beaten egg with the water and sprinkle over flour mixture. Sprinkle in the vinegar, mixing lightly, until ingredients are well combined. Made them for my women’s gathering on the full moon in March. The theme that night was the moon. Used maple syrup instead of corn syrup for the second try in the marshmallow filling.

Allow chocolate to cool at room temperature for about 5 minutes before proceeding with assembly. Combine ¼ cup room-temperature water, corn syrup, honey, and sugar in a small pot, insert candy thermometer, and simmer until mixture reaches 240 degrees. I am glad I can make them from scratch. I chose the make the cookie part vanilla flavored instead of graham cracker. And the cookie is a bit more cake-like. It’s thicker but flavorful and soft. His daddy would snag a few, and Guas and his sister would ration the chocolaty little sandwiches so they would last the day.

Flatten with the palm of your hand. Wrap the edges of the plastic wrap around the dough. Brush the bottom and sides of a 15- by 10-inch jelly roll pan with vegetable oil. When I walk through the supermarkets today it’s INSANE the amount of “junk foods” or pre-packaged food available today. In fact, I found most of it even as a kid verging on disgusting sweet (I know you’ll think I’m weird but I hated Twinkies and I still do) but I DID love moon pies. My dad also always loved them and every once in a blue moon I’ll buy them as one of the snacks we keep in the office.

Place 6 tablespoons of the cold water in the bowl of a stand mixer fitted with the whisk attachment. Sprinkle the gelatin into the bowl and whisk briefly to make sure all the gelatin is in contact with water. Let soften while you make the sugar syrup.
